Color Strength:

Caramel Colors' strength is described by its Tinctorial Power, KO.56. Tinctorial power is the absorbance of a 0.1 percent weight/volume solution. It is measured across a 1 cm light path at a wavelength of 560 nanometers (nm). A high-quality spectrophotometer is used to measure the weight/volume. The deeper the caramel colour, the higher the absorption value.

Color tone is also a significant consideration. The Hue Index defines the colour tone, which is a measurement of the colour hue or red qualities of the Caramel Color as a function of absorbance at 510 and 610 nm. In fact, the greater the Tinctorial Power, the lower the Hue Index and the lower the red tones.

Specific Gravity:

Our caramel color has a specific gravity of 1.25-1.38 pounds per gallon, which translates to a weight range of 10.4-11.5 pounds per gallon. The liquid caramel color's matching dry ingredient concentration ranges from 50% to 70%.
